This Week's Little Life Notes From Me to You
It was really lovely to enjoy a summer lunch party on the back patio with a few of my students, we were so lucky to have a temperate day so it was pleasant to sit outside.
And what a summer we're having for the garden! Last year I let parsley, dill, and kale, go to seed and it's been not-stop harvesting. With my first cabbage almost ready it's time to get out the coleslaw recipes, and this dressing is a real favorite. Here’s it is:
Creamy Dill Dressing
Juice of one lemon 1 tablespoon Dijon mustard 1 teaspoon Maple syrup 2 cloves garlic Several tablespoons fresh dill or dill pesto, to taste Salt, pepper to taste.
1 cup olive oil
Mix all the ingredients except the olive oil in a blender until smooth. Drizzle the olive oil in slowly as you continue to blend until it’s creamy. Taste and adjust with more dill, lemon or olive oil- Enjoy!
